Antioxidant and Antimicrobial Capacity of Quinic Acid

Recently, agents with natural antioxidant and antimicrobial properties have been popularly studied. For this purpose, phenolic compounds, terpenes, organic acids are examined in their properties. Of these, increasingly being used pharmacology, medicine, food, industry. Quinic acid is a compound found many edible fruits plants. In study, the effect of quinic acid, which has structure cyclohexane carboxylic was determined vitro using seven different methods (DPPH, ABTS, CUPRAC, DMPD, FRAP, Fe3+ reduction, Total method). addition, its on fungi (C. albicans), gram-positive bacteria (S. aureus, S. pyogenes), gram-negative (E. coli, K. pneumoniae, P. aeruginosa) were by disk diffusion method. As result, it that broad-spectrum properties, but too low to be highlighted. While activity quite good, especially pneumoniae E. Pyogenes, aeruginosa, did not show any C. albicans. Although property low, showed more DMPD method, one these methods, because dissolves very well water.
